Summer Minestrone
Ingredients
- fresh shell beans
- chicken broth or vegetable broth
- onion diced
- garlic minced
- 1 sprig rosemary
- 1 sprig thyme
- tomatoes diced
- zucchini or any summer squash diced
- 1 handful basil fresh
- parmesan grated
Instructions
- Simmer fresh shell beans in broth with diced onion, minced garlic, and a sprig of rosemary and thyme
- Add diced tomatoes and zucchini for the last 10-15 minutes of cooking
- Finish with a handful of fresh basil leaves and a shower of grated parmesan
